Just to let everyone know, I received an email from Ms Fidel Ho, with a couple more details:

    Dear Sharon,

Thanks for your interst in our program.

This is a long term program, minimum of six moths. Different from the short courses outside. We are looking for people who are really commited and have passion for traditional trade. We hope that after the apprenticeship, they will be actively involved in promoting the craft. No fee and in fact we will pay the student to learn. I would say the shoe maker is the toughest one. It needs at least one year. One of his apprentices was Jimmy Choo.

If you are really interested, please come to our office and let us get to know you better. Please call me before you come as I am not always at the office.
